Gluten Free Dairy Free Recipes: Dinner Time Sesame Ginger Salmon I've been on a real ginger-kick lately, using it in tea, on salads, on meat, in just about every meal of the day... it's becoming a bit of a problem...That said, I would love to share my latest ginger recipe: "Sesame Ginger Salmon".  Easy, quick, and TASTY!!!  Its dinner time everyone! Sesame Ginger Salmon - Ingredients: Your choice of Salmon cuts Peeled and shredded ginger Diced green onion Sesame Oil Sesame seeds Splash of vegetable oil for the pan Salt to taste Lemon wedge What Do I Do? Preheat oven broil setting (475' F - 500' F) Heat an oven-safe skillet with a splash of oil to med-hi  Place the salmon on the oil, skin side down Top salmon with ginger, onion, sesame seeds and sprinkle with salt After a minute, transfer skillet to oven and broil until top is crisp and the fat of the salmon is starting to come to the surface.  (Time depends on size of cut) Let stand...

Gluten Free Dairy Free Recipe: California Chicken Salad I know its Winter, and I promise to bring you a warming dinner soon, but I've been inspired by all this sunshine today in Toronto, (AND BY MY UPCOMING TRIP TO LA!!!) to make something with a West Coast flavour!  Chicken Salad is very simple and can be jazzed up with any number of ingredients, but I have presented a basic recipe that is fool-proof.  You are welcome to add your own favorite extras.  May I suggest, to name a few, sliced avocado, dried cranberries, toasted pine nuts, slivered almonds, mandarin slices, black olives, and the list goes on.  So here are the basics.  And my countdown to LA has begun!  (T-minus 17 days!!!) California Chicken Salad - Ingredients: Chicken breast, either leftover shredded, or baked and sliced.  I seasoned mine with a bit of dried basil and salt.  Very simple. gluten free dairy free recipes "Make-Your-Own" - Simple Pho! I promised a winter-recipe, and here it is!  This is a very basic way to make a flavourful bowl of rice noodle soup.  You can use beef or chicken, or go veggie with cubed tofu!  Its very simple, very inexpensive, and there's nothing quite as comforting as a big bowl of hot soup on a cold day.  Enjoy! Simple Pho -  Ingredients: Chicken, beef or tofu.  I used ground beef rolled into balls. Thick rice noodles Sliced onions Natural Chicken, Beef or Vegetable Broth Dried Basil Nutmeg Diced green onion Salt What do I do? Fill a pot with broth and bring to a light boil Add onions and simmer until translucent Add a few spoons of basil, and a pinch of nutmeg If using raw meat, add to broth and bring back to a simmer until cooked. Add rice noodle and cook for one minute before removing from heat. Season with salt to taste Top with diced green onion and serve  You can make this ...

Gluten-Free Recipes: Gravy ¼ c butter or margarine ¼ c + 2 TBS All-Purpose Flour Blend (click to purchase) 3 c chicken or beef broth ½ tsp granulated onion 1/8 tsp granulated garlic 2-3 tsp or cubes chicken or beef bouillon to taste pinch of black pepper Melt margarine or butter in a saucepan over medium heat. Add flour and stir until smooth. Add broth slowly, whisking until smooth. Boil and stir for one minute. Add 1 c cubed chicken or beef (optional). Lumps in your gravy or white sauce? Try turning the heat off with the first addition of milk or broth and stir until smooth with an addition of liquid. When all liquid has been incorporated and stirred smooth, turn the heat on and continue cooking and stirring until thickened. NOTE: Milk scorches quickly. Do not use high heat and stir constantly.

Gluten-Free Recipes: Vanilla Cake 1 ½ c All Purpose Flour Blend ¾ c corn or potato starch ¾ c white rice flour 4 tsp baking powder 1 tsp salt ¾ tsp xanthan gum 1 ¾ c sugar 4 eggs ½ c butter 3 tsp vanilla 2 c milk (dairy, nut, rice or soy) Preheat oven to 350 degrees. Blend sugar, eggs, butter, and vanilla. Mix dry ingredients in a separate bowl and add to butter and sugar mixture, alternating with milk, until completely blended. Beat on medium speed 2 minutes. Pour into a greased and floured 9x13 inch pan or two 9 inch rounds, or 20-24 paper-lined muffin cups (3/4 full). Bake 9x13 inch pan 40-45 minutes, 9-inch rounds 35-40 minutes, and cupcakes 25-30 minutes. The cake is done when wooden pick inserted in center comes out clean. Cool slightly before removing from pan. Cool completely before frosting. Chocolate Cake: Decrease potato or corn starch to ¼ c, add ¾ c cocoa to dry ingredients. Increase sugar to 2 c.

Gluten-Free Recipes: Chocolate Chip Cookies Cream together in large bowl: ½ c shortening ½ c margarine 1 ½ c packed brown sugar 1 tsp vanilla ½ tsp water 1 egg Stir in: 2 ¾ c All Purpose Flour Blend 1 tsp baking soda 1 tsp salt 1 c mini semi-sweet chocolate chips ½ c chopped nuts (optional) Preheat oven to 375 degrees. Mix all ingredients as indicated. Roll dough into 1 inch balls and place on an ungreased cookie sheet approx. 2 inches apart. Bake 8-10 minutes until light brown. Allow to cool slightly before removing from baking sheet.

Gluten-Free Recipes: Pancakes and Waffles Pancakes and Waffles 1 c All Purpose Flour Blend ¼ tsp salt 2 tsp baking powder 2 tsp sugar (optional) 1 egg ¾ c + 2 TBS milk (dairy, nut, rice or soy) 2 TBS oil Mix all ingredients thoroughly. Heat grill on medium high and coat with oil. Pour batter, approx. 6 TBS per pancake, onto a hot grill. Turn pancakes when bubbles begin to form on the surface. Makes approximately 5-6 pancakes. Waffles: Increase liquid to 1 c, increase eggs to 2, and add an extra 1 TBS oil. Pour approx. 6 TBS batter onto hot oiled waffle iron. Remove when brown on both sides, approx. 3-5 minutes.

Gluten-Free Recipes: Banana Bread 3 medium bananas (approx. 1 ½ c mashed) 2 TBS milk (dairy, nut, rice or soy) 3 TBS oil 1/3 c packed brown sugar 1 pinch salt ¾ tsp soda 1½ c All Purpose Flour Blend 1/3 c chopped walnuts (optional) Preheat oven to 350 degrees. Mash bananas with a fork or potato masher until smooth and only very small lumps remain. (Mashed bananas work best. Do not puree) Add milk, oil and brown sugar and stir until thoroughly mixed. Combine dry ingredients in separate bowl. Add dry ingredients to wet ingredients and stir until blended. Do not over stir. Pour batter into two greased 5 x 2 ½ inch mini loaf pans or one 8 x 4-inch loaf pan. Bake mini pans 35-40 minutes, 8 x 4 pan 55-60 minutes or until wooden pick inserted in center comes out clean. Place foil over the entire top of large loaf for the last 15 minutes baking time if a loaf is getting too brown. Cool on wire rack. NOTE: This recipe works best in mini loaf pans. McCann’s Irish Oatmeal- gluten-free Filed under: Breakfast Foods, Baking/ Cooking Ingredients Now, I have to admit, I have only used this for baking cookies and making apple crisp, so I have no clue if it actually makes great hot oatmeal.  This brand is imported from Ireland and costs $3.99 for a 16-ounce box at my natural food store. They assured me it was a gluten-free product, and I had no reaction when I ate it. However, use at your discretion (Note added: this product meets European standards for “gluten-free”, but does not meet Canadian standards, which are more strict. the US doesn’t have any real standards right now.) That being said, these oats are fantastic and make amazing apple crisp ( recipe is listed in the recipe section on this site) The cookie recipe on the box is also decent as well. Kinnikinnick Tapioca Rice English Muffins- Gluten free Filed under: Snack Foods, Breakfast Foods, Muffins & Bagels, Frozen Foods I purchased these muffins in the frozen foods section of a natural foods store for $5.29 for a package of four muffins. These aren’t your average sized muffins though- they are HUGE! Very thick, very tall. You could easily split them in half and save one half for later. Each muffin is 170 calories The package suggests microwaving or toasting for best flavor.  The first time I zapped the frozen muffin in the microwave for 40 seconds. It was perfectly thawed and warmed. So much so that the “browned” top and bottom of the muffin started to flake off, leaving a holey interior exposed. These muffins are soft with your “typical” rice bread flavor and texture- mild, dense, almost sponge-like. I tried to flatten the bread but it would bounce right back( for the most part!). This is a corn based cereal with peanut butter puffs. No, not peanut butter flavored- they use real peanut butter! ( What a concept eh?) The golden round corn puffs are initially very crunchy. As you eat, they soften a touch but never lose their signature crunch. Overall, a great breakfast cereal that anyone would love. This cereal sells for $4.69 for a 16-ounce box. Pros: satisfying crunch, wonderful PB taste, organic ingredients Cons: Can’t think of any! This, I had to try!  The owner of my local natural foods store swears by them, so I decided to take the plunge. I was hoping they would be pretty good since I shelled out $7.49 for a package of 6. These donuts are purchased frozen and best when microwaved and consumed warm. The frosting ( or “dipped” part) is gooey and very sweet with a nice cocoa flavor. The actual donut part resembles a traditional cake donut and is milder in taste and not as sweet.  The texture and consistency is wonderful, especially for a white rice-based product ( which often are crumbly, IMO). These make a delicious breakfast item or for even dessert. PROS: Nice chocolate flavor, cake-like texture, and consistency, a great gluten-free alternative to the “regular” version CONS: Only tastes really good when warm, really sweet Rating: 4  1/2...

Loved them. Especially with cream cheese and sliced strawberries, peanut butter, or strawberry jam . . . yummm. And before last week, I hadn’t tried a gluten free bagel because I convinced myself a decent tasting replacement just wasn’t possible. I am not sure why I picked up this package of Glutino Sans Gluten Free Premium Plain Bagels and plopped it in my basket, but I did. And boy am I glad! These bagels are sold in packages of five for $5.79 in the frozen foods section of my local grocery store and are double packaged for ultimate freshness. Now, my sister Kristina swears by the Kinnikinnick bagels ( a review of them will be along soon!) I have found these to be chewy and satisfying. One of my old bagel favorites was the fresh baked sesame flavor from Wegmans. If you have ever tried their fresh artisan bread, bagels and muffins before going gluten-free, you know what I mean. These bagels come five to a package and are double packaged for optimum freshness. I purchased mine for $5.89 at my local grocery store. These bagels are quite large and filling! Ener-G Tapioca Hamburger Bun- gluten free/ wheat free/ casein free/ dairy free/ egg free/ soy free/ nut free Filed under: Bread & Biscuits One night my fabulously talented husband cooked pork BBQ for me and my entire family, perfectly flavored and super savory. However, in order to have a great dinner, I wanted my BBQ on a sandwich roll, not just on two slices of rice bread. It’s just not the same! So, when I came across this four pack of gluten-free tapioca hamburger buns, I thought I’d give them a try. I purchased them for $4.95. To prepare them, simply slice the bun in half and warm in the microwave or oven if you wish. This is what I did since I like warm bread with hot fillings. I must admit, these Ener-G gluten free hamburger buns really surprised me. The first bun I tested from the package didn’t disappoint me at all!
