Gluten Free Dairy Free Recipe: California Chicken Salad

I know its Winter, and I promise to bring you a warming dinner soon, but I've been inspired by all this sunshine today in Toronto, (AND BY MY UPCOMING TRIP TO LA!!!) to make something with a West Coast flavour!  Chicken Salad is very simple and can be jazzed up with any number of ingredients, but I have presented a basic recipe that is fool-proof.  You are welcome to add your own favorite extras.  May I suggest, to name a few, sliced avocado, dried cranberries, toasted pine nuts, slivered almonds, mandarin slices, black olives, and the list goes on.  So here are the basics.  And my countdown to LA has begun!  (T-minus 17 days!!!)



California Chicken Salad -
Ingredients:
Chicken breast, either leftover shredded, or baked and sliced.  I seasoned mine with a bit of dried basil and salt.  Very simple.
Mixed greens, I combined a spring mix with torn radicchio
Lemon juice
Olive Oil
Honey
Dijon Mustard
Trail mix: pecans, walnuts, pepitas, raisins, etc...


What do I do?

At the bottom of a large bowl, whisk together one part lemon juice to two parts olive oil with a spoon of mustard and honey.
Toss greens in dressing and arrange on plates.
Top with chicken breast and trail mix
Enjoy with a glass of white wine, and think of sunny, beautiful California.  I know I am!
