Gluten Free Dairy Free Recipes: Dinner Time Sesame Ginger Salmon I've been on a real ginger-kick lately, using it in tea, on salads, on meat, in just about every meal of the day... it's becoming a bit of a problem...That said, I would love to share my latest ginger recipe: "Sesame Ginger Salmon".  Easy, quick, and TASTY!!!  Its dinner time everyone! Sesame Ginger Salmon - Ingredients: Your choice of Salmon cuts Peeled and shredded ginger Diced green onion Sesame Oil Sesame seeds Splash of vegetable oil for the pan Salt to taste Lemon wedge What Do I Do? Preheat oven broil setting (475' F - 500' F) Heat an oven-safe skillet with a splash of oil to med-hi  Place the salmon on the oil, skin side down Top salmon with ginger, onion, sesame seeds and sprinkle with salt After a minute, transfer skillet to oven and broil until top is crisp and the fat of the salmon is starting to come to the surface.  (Time depends on size of cut) Let stand...

Gluten Free Dairy Free Recipe: California Chicken Salad I know its Winter, and I promise to bring you a warming dinner soon, but I've been inspired by all this sunshine today in Toronto, (AND BY MY UPCOMING TRIP TO LA!!!) to make something with a West Coast flavour!  Chicken Salad is very simple and can be jazzed up with any number of ingredients, but I have presented a basic recipe that is fool-proof.  You are welcome to add your own favorite extras.  May I suggest, to name a few, sliced avocado, dried cranberries, toasted pine nuts, slivered almonds, mandarin slices, black olives, and the list goes on.  So here are the basics.  And my countdown to LA has begun!  (T-minus 17 days!!!) California Chicken Salad - Ingredients: Chicken breast, either leftover shredded, or baked and sliced.  I seasoned mine with a bit of dried basil and salt.  Very simple. I promised a winter-recipe, and here it is!  This is a very basic way to make a flavourful bowl of rice noodle soup.  You can use beef or chicken, or go veggie with cubed tofu!  Its very simple, very inexpensive, and there's nothing quite as comforting as a big bowl of hot soup on a cold day.  Enjoy! Simple Pho -  Ingredients: Chicken, beef or tofu.  I used ground beef rolled into balls. Thick rice noodles Sliced onions Natural Chicken, Beef or Vegetable Broth Dried Basil Nutmeg Diced green onion Salt What do I do? Fill a pot with broth and bring to a light boil Add onions and simmer until translucent Add a few spoons of basil, and a pinch of nutmeg If using raw meat, add to broth and bring back to a simmer until cooked. Add rice noodle and cook for one minute before removing from heat. Season with salt to taste Top with diced green onion and serve  You can make this ...

Gluten-Free Recipes: Gravy ¼ c butter or margarine ¼ c + 2 TBS All-Purpose Flour Blend (click to purchase) 3 c chicken or beef broth ½ tsp granulated onion 1/8 tsp granulated garlic 2-3 tsp or cubes chicken or beef bouillon to taste pinch of black pepper Melt margarine or butter in a saucepan over medium heat. Add flour and stir until smooth. Add broth slowly, whisking until smooth. Boil and stir for one minute. Add 1 c cubed chicken or beef (optional). Lumps in your gravy or white sauce? Try turning the heat off with the first addition of milk or broth and stir until smooth with an addition of liquid. When all liquid has been incorporated and stirred smooth, turn the heat on and continue cooking and stirring until thickened. NOTE: Milk scorches quickly. Do not use high heat and stir constantly.

Gluten-Free Recipes: Vanilla Cake 1 ½ c All Purpose Flour Blend ¾ c corn or potato starch ¾ c white rice flour 4 tsp baking powder 1 tsp salt ¾ tsp xanthan gum 1 ¾ c sugar 4 eggs ½ c butter 3 tsp vanilla 2 c milk (dairy, nut, rice or soy) Preheat oven to 350 degrees. Blend sugar, eggs, butter, and vanilla. Mix dry ingredients in a separate bowl and add to butter and sugar mixture, alternating with milk, until completely blended. Beat on medium speed 2 minutes. Pour into a greased and floured 9x13 inch pan or two 9 inch rounds, or 20-24 paper-lined muffin cups (3/4 full). Bake 9x13 inch pan 40-45 minutes, 9-inch rounds 35-40 minutes, and cupcakes 25-30 minutes. The cake is done when wooden pick inserted in center comes out clean. Cool slightly before removing from pan. Cool completely before frosting. Chocolate Cake: Decrease potato or corn starch to ¼ c, add ¾ c cocoa to dry ingredients. Increase sugar to 2 c.

Gluten-Free Recipes: Chocolate Chip Cookies Cream together in large bowl: ½ c shortening ½ c margarine 1 ½ c packed brown sugar 1 tsp vanilla ½ tsp water 1 egg Stir in: 2 ¾ c All Purpose Flour Blend 1 tsp baking soda 1 tsp salt 1 c mini semi-sweet chocolate chips ½ c chopped nuts (optional) Preheat oven to 375 degrees. Mix all ingredients as indicated. Roll dough into 1 inch balls and place on an ungreased cookie sheet approx. 2 inches apart. Bake 8-10 minutes until light brown. Allow to cool slightly before removing from baking sheet.
