Gluten Free Dairy Recipes: No-Bake Coconut Brownie Bites

Today, I was lucky enough to be interviewed by Randy Johnston of CKWR's Midday With RJ about my latest recipe, and how it relates to my upcoming show Dairy-Free Love; the play.  (Full interview HERE)  I star in this one-woman show that will be touring to a number of Canadian cities this coming Summer, and I hope to take the show on the road to LA in the coming year!

During the show, the main character, "Dawn", (played by me!) makes three recipes live onstage, and this is one of those recipes!  Enjoy!

Coconut Brownie Bites -

Ingredients:

10 pitted Medjool Dates
3/4 Cup Walnuts
1/2 cup cocoa powder
2 Tbs Maple Syrup
1/2 cup shredded coconut
What Do I Do?
Use a food processor to pulse the walnuts into crumbs
Add all other ingredients and blend until mixture forms a ball
Form mixture into small balls and roll in coconut.
SO EASY!  No-bake, gluten, dairy and sugar-free and also raw-food and vegan-friendly.  Oh, and they're awesome!  I know what I'm having for dessert tonight!  Have a great weekend everyone!
