Gluten-Free Recipes: Pancakes and Waffles



Pancakes and Waffles

1 c All Purpose Flour Blend
¼ tsp salt
2 tsp baking powder
2 tsp sugar (optional)
1 egg
¾ c + 2 TBS milk (dairy, nut, rice or soy)
2 TBS oil
Mix all ingredients thoroughly. Heat grill on medium high and coat with oil. Pour batter, approx. 6 TBS per pancake, onto a hot grill. Turn pancakes when bubbles begin to form on the surface. Makes approximately 5-6 pancakes.


Waffles: Increase liquid to 1 c, increase eggs to 2, and add an extra 1 TBS oil. Pour approx. 6 TBS batter onto hot oiled waffle iron. Remove when brown on both sides, approx. 3-5 minutes.
